Holiday Recipes

We would like to take this time to share some of our favorite recipes that have been handed down for years and years in our families.

Grandma's Peach Cobbler
1 stick butter
1 cup sugar
1 cup milk
1 cup self-rising flour
1 pound can of peach pie filling or 2 cups of freshly sliced Georgia peaches

Melt butter in a 2 qt. casserole. Mix together flour, sugar and milk, pour over the melted butter. Do not stir. Pour peaches all over the top. Bake @ 375 degrees for approximately 40 minutes. I cover mine with a lid the first 10-15 minutes or so, then the top will not get too brown.

Willie-Mae's Sweet Potato Casserole
7 large sweet potatoes cleaned & baked till done, skins removed
1 stick butter
1/4 cup honey
1 can Borden's sweetened condensed milk (not evaporated milk)
1 tsp cinnamon (a tad more if you like)
1/4 cup light brown sugar
1 tsp vanilla flavoring
Chopped pecans
1 10oz bag mini marshmallows

Place sweet potatoes in large mixing bowl and mix everything but the pecans and marshmallows until the mixture is smooth.
Pour into a large casserole dish
Sprinkle chopped pecans on the top (the quantity depends on your preference for pecans, I like about 1 cup)
Sprinkle marshmallows over the top
Bake covered at 350 degrees for about 30 minutes, remove lid and bake another 10 minutes.
Tip If the marshmallows are old, they will not melt, they will turn brown and burn. Check the expiration date on your marshmallows.

Tip #2 (from personal experience) Never, under any circumstances place sweet potato casserole with marshmallows on top into the broiler of a gas oven. There will be fire and lots of it. Fortunately my sister-in-law and I got the fire out before the firemen had to be unexpectedly invited to dinner!

Dipped Cake Balls
Ingredients
1 16 ozcontainer of prepared chocolate frosting
1 block of chocolate almond bark or pkg of candy confections found in arts & crafts stores
1 18.25 oz package of chocolate cake mix

Directions

Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, let cool completely and then crumble into a large bowl forming fine crumbs. Stir in frosting until well blended.
Use a melon baller or small scoop to form balls of chocolate cake mixture. Place balls on cookie sheet and refrigerate till cool or freeze. Tip: Make these the night before to dip them the following day which insures they are really cold.
Melt chocolate coating in a glass bowl in the microwave or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
Dip the balls in chocolate using a toothpick or fork to hold them. Place on wax paper and while chocolate is still wet sprinkle with cookie sprinkles, nuts, coconut or anything other desired topping. Leave on wax paper to set.

Tip: You may also insert lollipop sticks into these before chilling to make cake pops.
Another Tip: Don't limit yourself to chocolate. Try white chocolate coating with dark chocolate cake, mint coating with dark chocolate, German chocolate cake with dark chocolate coating. Just about any cake and frosting combination can be tried with any other coating. Be creative and make up your own combination.

Happy Holidays!
